Place rice in bowl and cover with cold water. Let soak for 30 minutes. Drain well. Put rice in a heavy sauce pan with milks, sugar, and salt. Stir well to combine. Bring mixture to a simmmer and cook over low heat, stirring frequently, for 25 minutes. Remove from heat and stir in lime juice and zest. Pour into serving dish and cool.
Serves 4. Zesting lime first, before juicing, strongly recommended.
