Millet Muffins

Preheat oven to 375 degrees. Butter 24 cups, or use paper cups - makes two dozen. Sift flour, baking powder, salt, and baking soda together in a large bowl. Then, stir in toasted millet.

In a small bowl, wisk together the eggs, milk, and vanilla.

In a third bowl, beat butter and sugar (in a mixer or by hand) until light and fluffy. Add flour mixture, alternating with egg mixture. Begin and end with flour, blend until JUST mixed.

Spoon batter into prepared cups. Bake 15-20 minutes, rotating upper and lower trays halfway through. Cool in pan 5 minutes, remove from pan and let cool a bit longer... maybe!
