Galette (sweet)

Combine flour, sugar, cornmeal, and salt in processor, pulse to mix. Add butter, pulse until mixture resembles fine crumbs. Add ice water, 1 tablespoon at a time, until dough becomes cohesive. Wrap tightly in plastic wrap. Refrigerate at least 1 hour or overnight.

Preheat oven to 375. Roll out dough on a lightly floured silpat, shape into desired size. Spread thin layer of jam leaving 1-2 inch border to edge, lay out fruit slightly overlapping. Sprinkle fruit with additional sugar if desired, lift pastry edge and fold over filling to make a pleated border. Brush egg wash over border.

Bake tart 45 to 50 minutes, until fruit is bubbling and edges are golden. Remove from oven and allow to cool at least 30 minutes. Top with ice cream or whipped cream, if desired.
