Cinnamon Trail Bread

You can purchase trail mix, a blend of dried fruits and nuts, at many markets and health food stores. If the mixture is unavailable, substitute ¾ cup each mixed dried fruits and whole nuts.

In a 2 to 3 quart pan, combine the brown sugar, water, trail mix, butter and salt; set over medium heat and stir until butter melts. Set aside to cool.

In a large bowl, combine the cooled mixture with the baking soda, cinnamon, egg, and flour; stir until well blended. Pour batter into a greased 4-by-8 inch loaf pan.

Bake in a 350 degree oven until a wide crack forms in top and a wooden pick inserted in center comes out clean, 50 to 55 minutes. Cool on a rack 10 minutes. Remove from pan, set right side up, and cool to room temperature.

Slice to serve. Wrap airtight in plastic wrap to store at room temperature up to 5 days. Makes 1 loaf.
